⅓cupdry anchovies(50 gr), fry them until crispy and set aside
2shallots, roughly chopped
2garlic cloves
1tablespoondry shrimps*
1tablespoondry anchovies *soak both dry shrimps and anchovies for 10 minutes in water and drain them
8Thai red chillis, cut
2eggs
⅓cupgreen beans(around 5 green beans), cut into 1 cm length
4cupcooked rice(800 gr), preferably one day old & short grain rice
1tablespoonlight soy sauce
2tablespoonwater
2ozbaby spinach(60 gr)

Instructions
In a mortar, pound the shallots, garlic, dry shrimps, dry anchovies and chillies into a paste. Set aside. You can also use a blender or food processor.
Heat a wok on medium high heat with some olive oil. Add in the pounded paste and cook until the shallots become soft. Add in green beans and cook for 2-3 minutes. Move everything to one side and pour in eggs. Let them harden a bit and scramble them. Mix everything.
Add in cooked rice and mix well. Add in soy sauce, water and stir everything to combine. Add salt if necessary. Add in spinach, mix well and cook until they are wilted. Add in fried anchovies, turn the heat off and mix everything well. Your fried rice is ready to serve.
