Delicious Scandinavian almond cake with cream cheese glazing. This cake reminds me of marzipan and Christmas. Soft and moist, easy to prepare and delicious.
Sift flour and baking powder into a bowl. Add in almond meal, mix well and set aside.
In another bowl, add in sugar, milk, egg and almond extract. Whisk to combine. Then add in flour mixture. Mix everything well just to combine, don't over mix.
Now add in melted butter and sunflower oil. Mix everything well, again don't over mix the batter. Pour into a 10 inch (25 cm) bundt pan that has been buttered and floured before hand.
Bake in a preheated oven at 350ºF (175ºC) for 30 minutes or until fully cooked. Remove from the oven and leave for 10 minutes before flipping the cake onto a wire rack. Leave to cool completely.
The Glazing
In a bowl, mix together cream cheese with icing sugar using a spatula. Then add in milk and mix well to combine.
Pour on the cake. Sprinkle some almond slices on top. Slice and enjoy!
