Ingredients

To Soak

  • 2 cups glutinous rice (370 gr)
  • enough water to cover until 1 inch (2.5 cm) over surface
  • 2 teaspoon turmeric powder

To Steam

  • ½ cup coconut milk (125 ml)
  • ½ cup water (125 ml)
  • 1 teaspoon salt or to taste

Instructions

Soaking

  • In a bowl, add glutinous rice, turmeric powder, and water. Mix everything together with a spoon. Leave to soak overnight or for 8 hours.

Steaming

  • In another bowl, add coconut milk, water, and salt. Mix until salt is dissolved and set aside.
  • Prepare your steamer on high heat (using a pot, bamboo steamer, or electric steamer). Drain the glutinous rice and gently place it in a steamer basket. Steam for 15 minutes or until half cooked.
  • Carefully remove the basket and pour the half cooked rice into the coconut milk mixture. Using a spatula, gently mix everything well until the mixture is fully absorbed.
  • Place the glutinous rice back in the steamer basket and steam for another 20-25 minutes or until fully cooked. Stir every 10 minutes to ensure even cooking. Serve hot with any curry or sambal.

Notes

How To Store: Keep in an airtight container, in the fridge. Best consumed within 3-4 days. Reheat in the microwave or on medium heat in a steamer for a few minutes. You can also freeze it for up to 1 month. Thaw in the fridge and reheat as mentioned above.
