Servings: 2.5 cups
- 8 cups whole milk (2 liter)
- 7 oz whipping cream (200 ml)
- ½ teaspoon salt
- 3 tablespoon lemon juice
In a pot, add in milk, cream and salt. Bring it to a boil on medium heat. Stir now and then to prevent the milk from scorching. When the milk is boiling, add in lemon juice. Reduce to simmer and stir for 2 minutes until the mixture curdles. Turn the heat off.
Place a kitchen cloth on a strainer and place it in a bowl. Pour the mixture in. Leave to drain for 1 hour. Your homemade ricotta is ready! Place in a container and keep it in the fridge if you were to use it later.
