Thai Steamed Fish With Lime And Garlic

I LOVE fish. I love to eat almost almost all fish (edible ones, of course). So I'm always looking to cook different varieties of fish meals for my family. One of our favorite ones is this Thai steamed fish with lime and garlic.

Why? Because it's so delicious and super easy to make, just like my Chinese steamed fish!

This dish can be divided into two. The steamed fish and the sauce. Use a steamer and steam any white fish that you like and then discard all the liquid formed while steaming the fish. We will only use the steamed fish.

Don't forget to fill the cavity of the fish with lemongrass, which will give you so much flavor. Then you place the fish in a serving dish and pour the sauce on top of it.

The sauce is of course the star of this dish. The combination of fresh flavors in it. The tangy sourness that comes from the lime juice. The spicy touch comes from both the chilies and raw garlic.

The balance of sweetness and saltiness that comes from sugar and fish sauce. And the coriander just brings them all together. You just need to try it!

And oh.. not to brag or anything but the lemongrass and chilies came from my tiny garden.

Ingredients

• ▢ ½ cup hot water (125 ml)
• ▢ ½ teaspoon chicken bouillon
• ▢ 1 tablespoon granulated sugar
• ▢ 5 garlic cloves , miced
• ▢ 2 Thai chillies , finely chopped
• ▢ ¼ cup coriander leaves , finely chopped
• ▢ 2 limes , take the juice
• ▢ 2 tablespoon fish sauce
• ▢ 9 oz golden sea bream (250 g)
• ▢ 1 lemongrass , bruised and cut into 2 inches length

Instructions

• In a bowl, add in hot water, chicken bouillon and granulated sugar. Mix until the sugar is dissolved and set aside until the mixture has cooled a bit.
• Add in garlic, chillies, coriander leaves, lime juice and fish sauce. Mix everything together and set aside.
• Prepare your steamer. If you're using an electric steamer like me, place a baking sheet inside the steamer container and leave it overhangs on the sides. This is to make it easier to handle the fish when it's cooked. Place the fish inside. Put the lemongrass inside its cavity. Cover the steamer and steam for 15-20 minutes or until the fish is fully cooked.
• When fully cooked, using the overhanging baking sheet, lift up the fish and discard any liquid. Place the fish in a serving plate. Pour the sauce on top of it and enjoy it with a bowl of white rice!

Notes

I actually steamed 2 fish of 250 g for this amount of sauce. I just showed 1 fish in the video.
