I have to say, pinwheels are the easiest and fastest appetizer that you can make and yet still wow your guests when you're hosting during this holiday season.

So anything that can take a bit of work on our end and leave us with a bit of free time to enjoy some hot chocolate, properly sitting on a chair instead of standing in front of an oven.. is always welcomed. Don't you agree?

Puff Pastry
I would really recommend you find the best puff pastry that you can find in your local store. It really matters.
My mother-in-law, who is a super fan of puff pastry, recommended to me to buy puff pastry in our local supermarket Mercadona. They carry their own brand called Hacendado. And now whenever I need some, that's the brand and place for me to go.
We like to buy the one that specifically says butter in the packet, like the one we use in our delicious hot dog mummies. That one is awesome. So if you're in Spain, try it. It's a very good quality product considering the price.
The Filling
The filling can be whatever your heart desires, actually. In fact I've made a ham and cheese pinwheels and they were amazing.
And for today's recipe I'm making these beauties with cheddar cheese and turkey chorizo.
You can use your favourite cheese instead, just make sure it's the type that melts easily.
As for chorizo, again.. you can use your favourite chorizo. I'm going with turkey to cut back the fat a bit (oh who am I kidding?). You can simply use ham if you prefer.
This is the type of food that nothing can go wrong with it.
How To Cut Rolled Puff Pastry Easier
I don't know about you but I like to freeze my rolled puff pastry log before I slice it.
Puff pastry tends to get soften fast as it sits in room temperature. As easy and fast as this recipe is, sometimes we just need to tend to other things while cooking. We all know we are multitasking species. Right?
Freezing it for a while is going to make it firm. And I find it way easier to slice the rolled puff pastry when it's firm. It holds its shape way better and you don't get overwhelmed by having to hold it super gently in order to slice it.
So freeze it. It's going to be easier on you.

Puff Pastry Chorizo & Cheddar Pinwheels

Ingredients
- 3 tablespoon old style mustard
- 1 tablespoon honey (20 gr)
- 1 puff pastry sheet (18x10 inch or 45x25 cm)
- 7 oz cheddar cheese slices (200 gr)
- 5.3 oz turkey chorizo (150 gr)
- 2 tablespoon chopped chives
- 1 teaspoon chili flakes
- 1 tablespoon chopped chives , to sprinkle after baking
Instructions
- Mix mustard with honey. Then pour on pastry sheet and spread evenly, leaving 2 inch (5 cm) empty space at the shorter end.
- Place slices of cheddar followed by chorizo. Then sprinkle chives and chili flakes evenly on top. Roll tightly into a log and place in the freezer for 30 minutes for it to get firm.
- Once firmed, slice it to ¾ inch (2 cm) thick. Place the pieces on a baking sheet with baking tray. Bake in a preheated oven at 375ºF (190ºC) for 15 minutes or until golden brown and fully cooked.
- While still hot, sprinkle some chopped chives on top. Leave to cool completely. Enjoy!
