    Healthy Oats Banana Muffins

    I thought we'd start this year's sweet recipe with a healthy one like this super healthy oats banana muffins that have no refined sugar, white flour or butter.

    And they are super fluffy, moist, soft and of course.. super delicious!

    Yep.

    Healthier Option With Oats

    If you haven't already, you might want to check out my super delicious banana chocolate muffins that many of you have made and loved so much.

    I use that same recipe as the base and modified it using healthier ingredients options. I'm not saying that the previous recipe is bad, not at all. This is just the healthier version of it.

    So instead of white flour, I'm using oats flour.

    Oats are amazing healthy food. They are good carbs, high in fibre and protein. They also help in lowering the blood pressure and cholesterol level.

    Oats definitely fill you more than white flour.

    Healthy Oats Banana Muffins

    How To Make Oat Flour

    For this recipe I'm using store bought oat flour. Usually you can find it at the same aisle or section where they sell rolled oats.

    I was restocking my bread flour the other day and thought what the heck, will simply buy some packets of oat flour while I was at it.

    But if you don't feel like buying it, no worries. You can easily make it at home.

    How?

    Simply grind your rolled oats using your food processor into fine texture.

    Yes, that's it!

    But how much rolled oats will make how much oat flour?

    Well, from what I've tried it's not really a 1:1 ratio.

    1 cup rolled oats (90 g) = almost ¾ cup fine texture oat flour (90 g).

    By fine texture I mean white flour texture. If you grind the oats coarser then you might get almost 1:1 ratio.

    So if you're making your own oat flour, measure the oat flour after grinding. NOT before.

    No Refined Sugar Or Butter

    Yes, I'm not using any type of refined sugar in this recipe. Instead I'm using honey.

    Honey always helps make your baked goods more moist, which is a super amazing.

    I'm also using coconut oil instead of butter.

    You can use other natural flavoured oil if you want. No problem at all.

    There you go. Some tweaks here and there to make these healthy oats banana muffins. You can see for yourself that they are moist, soft and fluffy.

    Healthy Oats Banana Muffins (No Refined Sugar Or White Flour)

    These healthy oats banana muffins are super moist, soft and fluffy. High in fibre and protein makes them fill you more than the typical muffins. Try, you won't regret it!

    Ingredients  

    Dry Ingredients

    • 1 ¾ cup oats flour (230 g)
    • 2 teaspoon baking powder
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • ½ teaspoon cinnamon powder

    Wet Ingredients

    • 3 ripe bananas
    • ½ cup coconut oil (125 ml)
    • ¼ cup honey (80 g)
    • 1 teaspoon vanilla extract
    • 2 eggs , room temperature

    Others

    • 1 cup chocolate chips (180 g)
    • some more to sprinkle on top , optional
    Prevent your screen from going dark

    Instructions

    • Add all of the dry ingredients into a bowl and mix well. Take 2 tablespoon of flour mixture and add into a bowl containing chocolate chips. Mix well. Set aside.
    • In a bowl, mash the bananas into a fine puree. Then add the rest of the wet ingredients and whisk just to combine.
    • Add flour mixture into wet mixture and mix just until well combined. Finally add in chocolate chips mixture and give everything one last mix to combine. 
    • Scoop batter evenly into lined muffin tray. Sprinkle some chocolate chips on top.
    • Bake in a preheated oven at 400ºF (200ºC) for 18 minutes or until fully cooked. Leave for 10 minutes before transferring them on a rack to cool completely.

    About Chocolate Chips

    • Adjust the amount to your liking. Reduce it if you want. Instead of using additional chocolate chips, reserve some from your total amount to sprinkle on top.
    • Or skip sprinkling some chocolate chips on top. Having them do make the muffins more fabulous 😉

    How To Store

    • Keep them in an airtight container at room temperature up to 3 days. 
    • FREEZE: Place them on a tray and place in the freezer for 30 minutes. Remove and wrap them individually with a cling film. Put them in a ziplock bag and place them back in the freezer.
    • DEFROST: Defrost at room temperature. Heat for a few seconds in the microwave to bring it back to life.

      My family is trying to omit white sugar as much as possible and this recipe is AMAZING! (my picky eater hesitantly tried one and came back for another one!) I made my own oat flour as directed and the muffins turned out great!
